Scrambled Tofu

This is the first tofu dish I’ve ever made, and I’ll be honest—I was extremely concerned I wouldn’t like it. But I’m all about risk taking, and it turned out really good.

I started by draining a crumbling some medium-firm tofu (1lb block). Then I chopped up a ton of veggies (Onion, garlic, red peppers, green peppers, tomatoes, and some spinach)

Satayed the onion and garlic, then added the peppers, and then the tomato. I seasoned it with ground cumin and turmeric (approx a tsp). Then I added the crumbled tofu, and added the spinach and continued to cook and stir. It was relatively quick.

I added some red chilli sauce when I ate it and it was delicious!!

Black Bean Quesadillas

I made the best dinner ever tonight. Black Bean Quesadillas— courtesy the Canadian Living cookbook “The Vegetarian Collection”, which my sister got me for Christmas. Thank you sister:)

So I chopped some green and red peppers, onion, tomato, corn, and satayed with some olive oil. Added some chili powder and ground cumin, and a couple handfuls of drained and rinsed black beans and satayed  a little longer. Then I sprayed a baking sheet with Pam, and sprinkled cheese on the tortilla, loaded on the mixture, and added more cheese. Cooked at 425 for a brief time, and then DEVOURED it.

Technically I was supposed to add salsa to the mixture—but I was out, so I made it without, and it was still damn good.

Mmm, food.

Green Smoothie

It was super filling and delicious.

Using my new blender for the very first time, I loaded it up and hit “GO”.

Basic Green Smoothie Recipe

Yield: 1 large smoothie (1 to 2 servings)

Prep Time: 5 minutes

2 cups cold water
1 banana, cut into chunks
1 orange, peeled and separated into segments
½ apple (your favorite variety), peeled, cored, and cut into chunks
½ lemon, peeled and separated into segments
½-inch piece of fresh ginger, peeled and minced
2 cups baby spinach

1. Add all ingredients to a blender and puree until smooth and completely combined.

2. Drink all at once, or separate into two servings. The smoothie can be stored in an airtight container in the refrigerator for up to one day. When it comes out of the fridge, it will have thickened, so give it a brisk stir (or use a small whisk) and enjoy!
